Germany - Kartoffelklöße, Rouladen, Sauerkraut and Zwetschekuchen

We decided to have a Germany Day.  Kartoffelklöße, Jägermeister, Rouladen, Sauerkraut and Zwetschekuchen.

Ingredients for German Menu Bacon Eggs Beef Sauerkraut Potatoes Onion Mustard Pickles
German Menu - Gathering the Ingredients

Ingredients for Rouladen:
  • Beef - Well Marbled - Thin Sliced
  • 1 lb. Applewood Smoked Bacon
  • 2 Tbs. Butter
  • 2 Onions Sliced
  • 1 Jar Mustard - German Stone Ground
  • 1 Jar Dill Pickle Slices

Stuff each piece of beef with mustard, bacon and pickle.


For each piece of beef, layer the mustard, bacon and pickle.  Roll each and hold it together with toothpicks.

Melt butter in a pan and brown each side of the rolls.

Add the sliced onion and continue cooking until the onions are tender.















Ingredients for Kartoffel Kloesse - Kartoffelklöße (Potato Dumplings)

 Dumplings:
  • 1 Bag +Trader Joe's Potato Medley
  • 6 Strips +Wrights Applewood Cooked Bacon - Broken into Bits - Divided 2 each (Reserve Bacon Grease)
  • 3 Eggs - Divided 1 each
  • 1 Cup Flour - Divided 1/3 Cup each
  • 1 tsp. Salt - Divided 1/3 tsp. each
  • 1 Cup Breadcrumbs - Divided 1/3 Cup each

Sauce:
  • Bacon Grease - Drippings from pan
  • 1/2 Cup Chopped Onion
  • 1/4 Cup Breadcrumbs

Boil the potatoes until tender.  Run cold water over the potatoes.  Separate each color of potato into it's own bowl and add the dumpling ingredients.  Mash and stir well until you can form into 1-inch balls. Add a little more flour or breadcrumbs if it is too sticky.

Have a large pot of boiling water ready to drop the dumplings in.  Let them simmer gently 2 - 5 minutes until firm.

To make the sauce for the dumplings, add onion and bread crumbs to the pan of bacon grease (the pan you used earlier to cook the bacon for the dumplings).  Stir constantly until the sauce thickens.  Pour over the dumplings.








Ingredients for Sauerkraut:
  • 1 Apple  - Chopped into bite-size pieces
  • 2 mini-scoops of +Trader Joe's 100% Organic Stevia Powder
  • 1 Tbs. +Jagermeister USA  Liqueur
  • 1/2 Tbs. Cornstarch
  • 1 Large Jar Sauerkraut

Add all ingredients to a saucepan, add a lid and cook on low for about 40 minutes.
















The meal was delicious.  The Beef tasted somewhat like Pastrami, but even better, spicier.  The dumplings were indescribable.  The colors were beautiful and we left the skins on, so finding bits of skin with the bacon was a treat.  The sauce was the best sauce I have ever eaten.  And the Sauerkraut -  I like sauerkraut already, but this was a dream, with bits of apple and an out-of-this-world flavor.  We had Virgil's Root Beer - Zero with a bit of +Jagermeister USA Liqueur to top it off!

I have made many, many pies and tarts and have never thought to add lemon rind and cinnamon to the actual crust.  What a brilliant idea!  The crust of this tart is magnificently delicious and even picky eaters will like it!

Zwetschekuchen- German Plum Tart- Our Variation with Plums, Apricots and Nectarines.

Crust:
  • 4 Cups Flour
  • 2 Mini-Scoops +Trader Joe's  100% Organic Stevia Powder
  • 1tsp. Freshly Grated Lemon Peel
  • 1/2 tsp. Cinnamon
  • 2 Sticks Butter - Softened
  • 3 Eggs
  • 3-8 Tbs. Cold Water If Necessary
 Filling:
  • 3 +Angelcot Apricots
  • 1 Large Nectarine
  • 4 Medium Plums
  • 4 Mini-Scoops +Trader Joe's 100% Organic Stevia Powder

Add all of the crust ingredients except the eggs and water to a bowl and mix until crumbly.

Stir the eggs in well and add water as needed until you have a nice dough ball.

Roll out into a pie pan and make an indentation for the fruit.

Slice the fruit into uniform slices and decoratively place them atop the crust.  Sprinkle the remaining Stevia over the top of the fruit.

 Bake at 350 degrees for about 45 minutes or until fruits start bubbling and the crust is nice and browned.  Let tart cool as the fruit will be very hot.  Be careful, but Enjoy!  So Delicious!
