Roast Beef Sandwiches with Oranged Cottage Cheese and Frozen Grapes for Dessert


Right away in the morning, start on your Slow Cooked Roast Beef. 
I put mine in an iron skillet, fat side up and still slightly frozen.  I sprinkled salt and pepper over the fat and placed it in a 400 degree oven for 1 hour, then reduced heat to 250 degrees and cooked it until it was nicely browned on the outside.

Ingredients:
  • Beef Roast
  • 1/2 Tbs. Salt
  • 1/2 Tbs. Pepper

Roast Beef After About 4 Hours

Before slicing the roast, add 1 cup of hot water to the pan to pick up the juices from the bottom.  Put it back in the oven for 10-15 minutes.


 
Slice the Roast




Gather the Ingredients

 Ingredients:
  • Cracked Wheat Sourdough Bread
  • Romaine
  • Horseradish
  • Mayonnaise
  • Cottage Cheese
  • Ripe Oranges

Peel and slice the oranges, leave the good stuff on.

Put a few scoops of cottage cheese in a small bowl and add your orange slices.  Layer thin slices of roast beef on the sourdough.  Ladle a scoop of the juices into a bowl for dipping.  Dab a small amount of horseradish into a small dish so it can be added to the sandwich, if they like.  Have Mayo and lettuce available as well.




Hot Roast Beef Sandwich with Oranged Cottage Cheese, Au Jus and Horseradish


Wash and freeze some grapes for dessert.
