Gathering the Ingredients for Sweet and Sour Pork with Rice. |
- Boneless White Meat Pork Steak - 1 for each person
- 6 Eggs
- 1 Cup Frozen Peas
- 1 Cup Sesame Oil -divided
- 4 Tbs. Soy Sauce -divided
- 3 Cups Rice
- 1 Tbs. Cornstarch
- 2 mini-scoops Stevia + to taste for Pina Colada Cooler
- 1/2 Cup Rice Vinegar
- 1 Can Coconut Milk
- 2 Tbs. + 2 tsp. Garlic Powder
- 2 Tbs. + 2 tsp. Ginger Powder
- 1 Cup Ripe Cherries + a few reserved for Pina Colada Cooler
- 6 Ripe Apricots
- 1 Ripe Pineapple
- 2 Bell peppers - Various Colors
- 1 Red Onion
- 2 Garlic Bulbs - Cleaned and Chopped
- Ginger Root- Cleaned and Chopped
- 2 Cups Green Beans -Cleaned and Washed
- 2 Cups Asparagus Cleaned and Chopped in half
- 1 Carrot - Chopped
Chop and Brown the Pork in Sesame Oil. |
Getting the pork started first is important so you can let it brown and simmer until it is nice and tender.
Wash, Clean & Cut Cherries and Apricots |
Wash, clean and chop the red onion, ginger root, garlic bulbs, bell peppers, asparagus, green beans and pineapple. Have them ready to add to the pork.

Rice with peas and eggs added. |
Start on your rice. Stir 3 cups of rice, 2 Tbs. each of Soy Sauce, Garlic Powder, Ginger Powder, 1/2 Cup Sesame Oil, chopped carrot and 4-1/2 Cups Hot Water into an Iron Dutch Oven with a heavy lid. Have a 1 Cup Frozen Peas and 6 eggs set aside to add to the rice when it is done cooking. Start the rice on high heat. Do not remove the lid while the rice is cooking. When it starts to boil, reduce heat to warm. Set a timer for 20 minutes. When rice is cooked, remove lid and lightly stir in the peas and eggs. Replace lid for a few minutes until the eggs are cooked.

Pina Colada Cooler Ingredients |
Add chopped pineapple, ice, stevia, coconut milk and half and half to a blender for a great Pina Colada Cooler. Reserve some cherries and pop them on top of your frothy, cool drinks.
Voilà, there you have it. A wonderful, healthy meal is served and people will certainly want to have seconds!
