Blueberry Crumble and Cashew Clusters

Blueberry Crumble with Cashew Clusters was a very satisfying and healthy dessert.  I love raw cashews.  I love chocolate.  Can't go wrong with Cashew Clusters right?  The warm blueberries topped with spiced oats and crushed walnuts is so yummy and good for you too.

Ingredients for Blueberry Crumble:

Add all the ingredients except for the blueberries to a small bowl.  Crumble the oats, walnuts, butter and spices by hand until it is completely mixed. Add the blueberries to individual serving bowls.  Top each one with your crumble and put it in the microwave for about 1-1/2 minutes, until it is bubbly.  It will be very hot.  Serve with Cashew Clusters.

Chocolate and Cashews
Ingredients for Cashew Clusters:

Breaking up the Chocolate into squares.




Using a microwave safe bowl, melt the chocolate, olive oil and 2 scoops of Stevia in 15 second increments until it is almost completely melted.  Stir each time.

Layer the cashews on a large flat buttered dish and drizzle the melted chocolate evenly over the cashews.  Gently stir the cashew chocolate mixture to coat.  Let the clusters cool on the plate.  When the chocolate re-hardens you will then be able to break them into smaller pieces. (For quicker hardening, you may place the plate full of the Cashew/Chocolate mixture in the freezer for 5 minutes)
