Gathering the Ingredients for Hummus |
Ingredients:
- 1 Bag Garbanzo Beans
- 2 Tbs. Vinegar
- 2 Tbs. Olive Oil
- 1 Cup Raw Cashews
- 1/2 Cup Sesame Tahini
- 1/4 Cup Parsley
- 1/4 Cup Curry Leaves
- 1 Onion
- 1 Lemon
- 1 Garlic Bulb
- 1 Bag Carrots
- 1/4 Cup Shredded Coconut

Washing the Garbanzo Beans |
Wash the Garbanzo beans and follow the package directions for soaking and cooking.

Cooking the Garbanzos |
Cook the Garbanzos until they are tender.

Cooked and Ready to Use |
When fully cooked rinse the Garbanzos in cold water.

Have Everything Ready to Process |
Soak the raw cashews in hot water before processing. Chop the rest of the ingredients into small enough pieces to process quickly. Use 1 whole lemon wedge, skin and all in the mix while reserving the rest of the lemon for it's juice. Process it all, a bit of everything at a time and pour into a large bowl. Mix everything well and add more olive oil and vinegar as necessary to flavor it to your liking and to get the consistency
you like as well.

Wash the carrots and cut them into thin sticks.
This was the first time I used Curry Leaves in my Hummus. It adds a deliciously rich earthy flavor and is very satisfying.
