India -Curry Beef -Cabbage Koora -Basmati Rice -Malai Kulfi

Ingredients for The Curry
Ingredients for Beef Curry:

  • 3 lbs. Stewing Beef
  • 3 Slices Cheese
  • 2 Cloves of Fresh Garlic
  • 1 Tbs. Pickled ginger
  • 1 Small Apple - Chopped
  • 2 Carrots - Thinly Sliced
  • 1 Small Bag Frozen Peas, to sprinkle over Hot Curry when served
  • 1 Small Banana - Sliced
  • 1 Cup Cashews - Processed until Smooth
  • 1 Tbs. Cocoa Powder
  • 2 Mini-Scoops +Trader Joe's 100% Organic Stevia Powder
  • 1 Tbs. Instant Coffee
  • 2 tsp. Coriander
  • 2 tsp. Cloves
  • 1 tsp. Cardamom
  • 1 tsp. Garlic Powder
  • 1 tsp. Nutmeg
  • 1 tsp. Allspice
  • 1 tsp. Cinnamon
  • 2 tsp. Garam Masala
  • 1 tsp. Salt
  • 1 tsp. Turmeric
  • 1 tsp. Chili powder
  •  Cheese, Coffee and Cocoa
  • 1 tsp. Ginger powder

Ingredients for Cabbage Koora
Ingredients for Cabbage Koora (Coconut Cabbage Curry):
  • 1 Bag Shredded Cabbage
  • 1/4 Cup Shredded Coconut
  • 1/4 Cup Frozen Peas
  • 3 Tbs. Olive Oil
  • 1 Tbs. Urad Dal (Black Lentils -Skinned)
  • 1 Tbs. Chana Dal (Split Bengal Gram aka Chickpeas or Garbanzo)
  • 1 tsp. Mustard Seed
  • 1 Sprig Fresh Curry Leaves
  • 1 Pinch Asafoetida Powder
  • 2 Anaheim Chili Peppers - Chopped
  • 1 Red Jalapeño - Chopped

Fry gently  in Olive Oil





Add olive oil to a pan and cook all ingredients except cabbage and peas on low until hot. Then throw-in cabbage, cover and let simmer until the Urad Dal and Chana Dal are tender.  Add peas at the last moment, right before serving.

Cabbage Koora
I just have to mention the Curry Leaves and the Asafoetida Powder.  The scent, smell, odor, fragrance of these two spices are beyond amazing.  The taste transforms your food into an ethereal experience, beyond the realm of this existence.
Rice and Hot Water


Ingredients for Basmati Rice:

  • 2 Cups Basmati Rice
  • 3 Cups Boiling Hot Water






Food of the Gods - Basmati Rice
Add rice and hot water to a pot with a tight fitting lid.  Bring to a boil.  Do NOT remove lid.  Turn off heat and set timer for 20 minutes.  Fluff  rice immediately when timer goes off and serve.

This Basmati Rice is the best white plain rice I have ever eaten in my whole lifetime.  Where have you been all my life, oh Basmati?




Curried Beef - Cabbage Koora - Basmati Rice


Ingredients for Malai Kulfi (Saffron Ice Milk):
  • 3 Cups Half & Half
  • 1 tsp. +Trader Joe's 100% Organic Stevia Powder
  • 1/2 tsp. Cardamom Powder
  • 1 Cup Pistachios
  • Ingredients for Malai Kulfi
  • 1 Large Pinch Saffron Threads



Heat all ingredients on low until the spices are infused into the Half & Half.  Add Pistachios and stir gently.















Pour into a freezer safe bowl.  Freeze for 2 - 3 hours stirring every so often.  When the Malai Kulfi is frozen to a creamy consistency serve immediately.
