Linguica and Spelt Rotini Soup


Gathering the Ingredients for Linguica Soup


Cooked Linguica's from the B.B.Q.





Ingredients:
  • +Nature's Legacy Organic Tri-Color Rotini Made with Vitaspelt.
  • 3 -4 Linguica - Sliced into bite-size pieces
  • 1 Red Onion - Chopped
  • 2 Very Ripe Beefsteak Tomatoes - Chopped
  • 1 Bulb Fresh Garlic - Cleaned and Finely Chopped
  • Olive Oil to taste
  • Salt 
  • Pepper
  • Hot Water



Warming the Sliced Linguica
Adding the multi-colored Rotini
Add Onion, Tomato, Rotini and enough hot water to cover Rotinis.  Add lid and bring to a boil. 

Simmering the Linguica Soup


Reduce heat and let simmer about 10 minutes or until Rotini's are tender.












Cleaning the Bulb of Garlic

Add Olive Oil and Freshly Chopped Garlic to each bowl of soup.


I was feeling a little under-the-weather when I made this Linguica and Spelt Rotini Soup, so I added a lot of fresh chopped garlic, olive oil and 2 Tbs. of Apple Cider Vinegar to my bowl of soup.  It was really good and very satisfying.
