Chinese Pork With Purple Yam Noodles |

I made these with inspiration. I had some leftovers from the
Pork Chops With Baked Apples and Potato Medley (click on link above or see previous post
here). I had some Purple Yam Noodles and pickled ginger from our trip to Mitsuwa. I had a craving for something spicy, something...Chinese! So, I thought, Chinese Pork with Purple Yam Noodles!
Ingredients:
- 3 Leftover Pork Chops
- 1 Cup Spiced Baked Apple - Mashed
- 1 Cup Potato Medley - Baked and Chopped
- 1 Bulb Garlic - Cleaned & Finely Chopped
- 1/4 Cup Pickled Ginger
- 1/4 Cup Soy Sauce
- 1 Tbs. Garlic Powder
- 1 Tbs. Ginger Powder
- Purple Yam Noodles
- 1 Tbs. Sesame Oil

Adding the Soy Sauce and Spices |
Separate the Pork Chops, apples and potatoes. Remove all the bones and retain all the juices. Mash the apples and chop the Pork and Potatoes Julienne style. If you remember, this leftover mixture is pretty spicy already, so it needed plenty of garlic, ginger and soy sauce to transform it!

Microwaving the Pork Mixture |
Add all the ingredients to a microwave bowl, except for the Purple Yam Noodles and Sesame Oil. Heat thoroughly in 2 minute increments and stir well each time. Replace lid to keep the mixture hot while you prepare the noodles.

Boiling the Purple Yam Noodles |
Add noodles to boiling water and stir slightly.

Boil Until Just Softened |
Do not overcook the noodles, remove them immediately when they have softened. Pour them into a colander to drain.

Frying the Noodles in Sesame Oil |
While the noodles are draining, heat the Sesame Seed Oil in a pan, then stir fry the noodles quickly in the oil, and remove them before they start sticking.

Chinese Pork With Purple Yam Noodles |
Pop the meat mixture back in the microwave for a minute or two to ensure that it is piping HOT. Arrange the noodles on a serving platter and pour the HOT Pork Mixture in the center. Serve immediately to your eager friends and family who will have congregated in the dining area because of the great aromas emanating from your kitchen!
