Taquitos With Guacamole







Gathering the Ingredients- Taquitos With Guacamole



I love avocados.  I love fried corn tortillas.  I love the flavor of that shredded beef that has been slow cooking all day.

Slow Cooked Shredded Beef
Ingredients for Taquitos:
  • 2 Bulk Packages of Stewing Beef
  • 3 Dozen Corn Tortillas
  • Canola Oil
  • Salt
Ingredients for Guacamole:
  • 4 Ripe Avocados (Not too ripe) - Chopped
  • 1 Lime - juice and pulp
  • 1/4 Cup Red Onion - Chopped
  • 4 Garlic Cloves - Finely Chopped
  • 1 - 2 Jalapeños - Finely Chopped
  • Corn Tortillas
  • 1/4 Cup Cilantro- Chopped

You will need at least 3- 4 hours cooking time for the shredded beef.  As soon as I get up in the morning, I put the beef to cook in my Iron Dutch Oven on low and pretty much forget about it.  The delicious smell reminds me that it's still there, and I go to it once in a while to stir it and make sure it doesn't burn.  When everyone starts asking, "When's it gonna be done?"  I start getting the oil hot for softening the tortillas.

Have toothpicks ready to hold the taquitos together.
The oil needs to be very hot.  You use the tongs to put the tortilla in and out rather quickly, cooking it on one side and then flipping it to the other side.  It takes a little getting used to, trying to find the appropriate method and getting the right consistency, but after a few tortillas you will get it.  You want the tortillas soft, but not too soft, and pliable, but not too hard.  You should be able to roll them easily without them tearing or breaking.  Do this with the whole stack of tortillas and let them cool before you start stuffing and rolling them.

I put quite a bit of beef in each tortilla and I roll two of the open ends of the taquitos together and insert one toothpick into two rolled taquitos.

I like very crispy, crunchy tortillas.  Some people like them soft.  I put mine in a 400 degree oven for about 10 minutes and then I use the tongs to flip them over and do the same on the other side.  Taquitos can burn very easily, so keep a close eye on them.

Wholly Guacamole!

I ended up not being able to make my own Guacamole, since the avocados refused to ripen in time.  So, almost the next best thing was Wholly Guacamole.









Dip the Taquitos into the Guacamole and start munching away.  Delicious!

When you make your own Guacamole just add all the above ingredients to a bowl and use a fork to stir for a few minutes.  Leave your avocados a little chunky.  Enjoy!
