Preparing a Burrito |
I was cleaning out the cupboard and found a big bag of Red Beans. I was already thinking Cornbread, so I thought a nice pot o'beans would be perfect. Then I remembered the tortillas and the big hunk of cheese in the fridge and said, "Bean and Cheese Burritos!"

Ingredients for Burritos:
- Red Beans
- Extra Sharp Cheddar Cheese
- Tortillas
- Red Onions

I have picky eaters who just like bean and cheese burritos, but you gotta at least have onions and sauce too, right?

My people like lots of cheese on everything. You add lots of cheese to just about anything and they will eat it!

Mashing the Cooked Beans |
I know some people make refried beans out of their beans, or even leave them whole for burritos, but I like to mash them and still leave a few of the beans whole. That's the best!

Warm a tortilla on a grill, open flame or even the microwave. Add the mashed beans, chopped onion, grated extra-sharp cheddar cheese and hot sauce and then fold 'em up.
You can have other fillings like sour cream, green onion, olives, avocado, lettuce or tomato.
