I had some mayonnaise in the bottom
of the mayonnaise jar. I had 5 eggs and I had 10 slices of white bread, exactly! I figured I could make some simple, easy to make scrambled egg sandwiches for everyone.
Ingredients:
- 5 Eggs
- 10 Slices of Bread
- 1 Cup Mayonnaise (approx.)
- 2 Tbs. Butter
- 2 Tbs. Milk
Microwaving the Eggs |
I cracked the eggs into my microwave safe cup, added the milk and butter and microwaved for about one minute.
It takes a while, but you get the most fluffy, delicious eggs this way.
Stir gently after each time |
Keep stirring and heating in the microwave every 30 seconds until the eggs are a fluffy consistency (about 3 minutes). Be sure to stir very gently so you don't break down the egg.
Perfect fluffy eggs! |
Assembly Line Sandwiches |
They like lots of Mayo! |
Dollop mayo on the bread and gently scramble the eggs.
Spread your mayonnaise, add salt and pepper and spoon the scrambled eggs onto the bread.
Ready to Assemble |
Wrapping in Wax Paper |
Wax paper is easy to work with if you make creases in the paper as you fold. For some reason a sandwich to-go tastes better when wrapped in wax paper. Try it!
Stack of Scrambled Egg Sandwiches To Go! |
There's nothing better than having some sandwiches in the fridge, just ready to grab and EAT! Enjoy!
