Scrambled Egg Sandwiches For All




I had some mayonnaise in the bottom
of the mayonnaise jar.  I had 5 eggs and I had 10 slices of white bread, exactly!  I figured I could make some simple, easy to make scrambled egg sandwiches for everyone.

Ingredients:
  • 5 Eggs
  • 10 Slices of Bread
  • 1 Cup Mayonnaise (approx.)
  • 2 Tbs. Butter
  • 2 Tbs. Milk




Microwaving the Eggs

 I cracked the eggs into my microwave safe cup, added the milk and butter and microwaved for about one minute.


It takes a while, but you get the most fluffy, delicious eggs this way. 



Stir gently after each time

Keep stirring and heating in the microwave every 30 seconds until the eggs are a fluffy consistency (about 3 minutes).  Be sure to stir very gently so you don't break down the egg.

Prepare you wax paper and bread.

Assembly Line Sandwiches


They like lots of Mayo!




Dollop mayo on the bread and gently scramble the eggs.













Spread your mayonnaise, add salt and pepper and spoon the scrambled eggs onto the bread.

Now you are ready to assemble the sandwiches and wrap them in wax paper for the hungry mob!



Wrapping in Wax Paper











Wax paper is easy to work with if you make creases in the paper as you fold.  For some reason a sandwich to-go tastes better when wrapped in wax paper.  Try it!
