Crepes and Lime Curd For Breakfast (And YES it's KETO)

So, the family came over super early this morning, and I wanted to have something special for breakfast.  I roasted coffee and since I had 6 egg yolks left over from the cake, I decided to make Keto Crepes and Lime Curd.  My niece, at first was aghast (mixing the French with the English) but it  turned out to be so delicious and all was well.

Ingredients for the Lime Curd:

6 Egg Yolks
2 Tbs. Butter
1 tsp. Vanilla
Juice of 3 Limes
1 tsp. Lime Zest
20 mini-scoops Stevia Powder

Lots of Delicious Eggs

Separating the Eggs - Always Use 3 Containers

Whisking the Egg Yolks

Adding the Juice, Zest, Stevia, Vanilla and Butter

Whisk for 30 seconds after cooking 30 seconds in the Microwave.

Cook and Whisk 4 times for a total of 2 minutes cooking time.

Let the curds cool and place in jars.  Keep in fridge.

For the Crepes whisk 4 eggs and 4 Tbs. Cream and Stevia to taste.

Always use a small amount of batter for each crepe.

Spread with Lime Curd, fold and enjoy!
