- 6 egg whites
- 40 mini-scoops Stevia Powder - 10 scoops for meringue, 10 for the whipped cream and 20 for the melted chocolate
- 1 Unsweetened Bar of Baker's Chocolate
- 1 Tbs. Oil
- 1 Large Package of Strawberries -retain a nice shaped one for the dragon's head
- 1 Cup Heavy Whipping Cream
- Various cuttings from the Lemon Verbena and Lemon Balm herbs
- Butter for greasing the parchment paper

Parchment Paper on a cookie sheet. |
Use 3 containers to separate the eggs. |
Add the whipped egg whites to buttered parchment paper. |
Inspect the Lemon Vebena and Lemon Balm. |
Cut the fully cooked meringue in half lengthwise. |
I cooked the Meringue for 1/2 hour at 250 degrees then 1 hour at 200 degrees |
Place sliced strawberries on the bottom portion of the meringue. |
Add the top meringue. Cut 4 "leg" sprigs and a tongue for the head strawberry. |
Cut the body in 2 places to give it a curved effect. Add whipped cream, sliced strawberries and leaves for decoration. |
I used a toothpick to gouge the eye holes so I could use the chocolate as "glue" to add the leaf eyes. |
Melt the chocolate slowly in the microwave add the 20 scoops of stevia and Tbs. of oil. Be sure the strawberries are washed and dried thoroughly. |
The dragons "treasure" that he guards are the chocolate dipped strawberries. |
I had extra melted chocolate so I drizzled everything with it. The dragon wasn't too pleased, but we sure were when it came time to eat him. |
Voila! The Dragon with his treasure. He's Keto and was perfect for my daughter's birthday cake! Notice I say WAS...poor dragon never had a chance! |
