Keto Cheesecake

Keto Cheesecake
I had bought one of those huge things of cream cheese.  It all started with a craving for that cheese you find in cheese danish.  So having satisfied that craving with those delicious scones topped with a cream cheese frosting, I still had more than half left.  We used a little in the Éclairs, but still, there it was calling out to me.  So, I thought, CHEESECAKE!  Yes, it was doable.  I had butter, some almond meal left over from the scones, cream, plenty of stevia, vanilla, YES!

Ingredients for Cheesecake Crust:
First slice of cheesecake for my son.
  • 1 1/2 Cups Almond Meal
  • 1 Stick Softened Butter
  • 10 Mini-scoops Stevia Powder
  • Pinch of Salt
Mix all ingredients and form into the bottom of a pie pan.
  • About 5 Packages (8 oz.size) softened cream cheese (or a little over half of those huge cream cheese bricks)
  • 1/2 Cup Cream
  • 1 tsp. Vanilla
  • 20 Mini-scoops Stevia Powder

Next slice, for ME! :D
Mix all ingredients well and pour into the pie crust.  Bake at 375 degrees for 30 minutes.  Cool  completely before placing in the fridge.  Chill in the fridge for 2-3 hours.  Cut slices and enjoy.  You may top with fruit, chocolate or just about anything.

I was surprised how good this turned out without any egg or flour.  It had a great consistency and would have been perfect with a few wild blueberries!
