Here's a Keto recipe for Jicama Eggplant stuffing. It sounds a bit odd, but a lot of people say it's rather convincing. Since it is modelled after simple bread and celery stuffing, you could probably use this as a base and add in meat, fruit, or anything else that you like in stuffing. Each serving has just under 5 grams of net carbohydrate.
