Ingredients:
- 3 Pork Katsu (Boneless Pork Steaks - See recipe HERE) -Chopped into bite-size pieces
- 1 Package Soba (Buckwheat Noodles)-Cooked according to package directions
- 1/2 Cup Grated Daikon
- 1 Stick Celery - Chopped
- 2 Tbs. Pickled Ginger
- 1 Red Onion - Chopped
- 1/2 Stick Butter
- 1 Tbs. Sesame Oil
Put oil and butter in a large pan and get it sizzling. Quickly add the onion and celery and stir, then a minute later, the Daikon, leftover Pork Katsu. When it is hot add the Pickled Ginger and the cooked and drained Soba (Buckwheat Noodles). Stir gently and serve immediately.
This was surprisingly mouthwatering and delicious. It tasted creamy like cream of mushroom soup, but the chunks of red onion, celery and ginger added color and kick. I love buckwheat, and Soba noodles are good by themselves, but this was truly a treat.
