Keto Double Mocha Cake
This is a simple recipe for a Keto Double Mocha Cake. It uses coconut flour, coconut oil, and coconut milk. I like the fact that it has a frosting recipe. Coconut flour products tend to be a bit dry, so I think that the frosting would really help. Each serving, which is one twelfth of a double-layered cake, has 3 grams net carbohydrate. Chilled Mocha
This is a great afternoon pick-me-up. The coffee really wakes you up, and the chocolate flavor is similar to an Oreo cookie. It's also a great chocolate fix for those days you just gotta have some chocolate.
Add cocoa powder, 4 scoops of Stevia, 5 drops vanilla and coffee to the boiling water and stir until completely dissolved. Set aside in freezer to chill.
Whip the cream with 2 scoops of Stevia until light and fluffy. Set aside in freezer to chill.
Using a large knife, shave pieces of chocolate off of your chocolate bar.
When everything is chilled pour equal amounts of coffee mixture into glasses. Add equal amounts of half and half and cold water. Top with a dollop of whipped cream and shaved chocolate.
Get ready to enjoy richness like you have never had before! It's really almost sinful...

- 2 Tall Chilled Glasses
- 2 Tbs. Instant coffee - Use an espresso or really dark, rich coffee.
- 4 Tbs. Real Whipping Cream
- Half and half
- 1/4 Cup boiling water
- Cold Water
- 6 mini scoops Trader Joe's 100% Organic Stevia Powder
- 1 Tbs. Trader Joe's Cocoa powder
- 5 drops Real Vanilla
- 72% Cacao Dark Chocolate Bar

Evidence
I was gone for 4 weeks. Little did my fellow residents know that they left evidence behind. I knew where they ate out and approximately how many times. Going through the fridge I saw +BURGER KING , +McDonald's , +Panda Express, +Papa John's Pizza, +Wienerschnitzel , +Jack in the Box , +Del Taco and +Taco Bell I knew because the bag that holds all the leftover packets of ketchup, mustard and hot sauces was full, almost overflowing with those sweet little packets.

A Pork Parmesan could be made using all the Papa John's Garlic sauce, Papa John's seasoning and Parmesan Cheese; A somewhat large pack of Italian dressing (wonder where that came from?) and some sample size organic pasta.

The mayo packets and Ranch dressing could go with my Parsley Sage Rosemary and Thyme Pork chops (A family favorite). Instead of breadcrumbs I usually use ground almonds, but this time I have pecans!
